Thai chicken and sweet potato curry

It’s snowmageddon in England. Sick of the cold, inadequate heating, lack of sunlight, black ice, soggy socks and a complete breakdown in our transport infrastructure, C and I are getting away from it all and have booked a two week trip to Thailand in March. We simply can’t wait! In homage to our forthcoming trip I cooked up a Thai chicken curry at the weekend, only in the knowledge that the post-Thailand version of me will look back at this recipe and scoff. I hope to have some cooking lessons out there and learn about real Thai food, but until then this recipe will do.

I used some deboned chicken thighs from the Farmison meat box for this recipe. Ideally I would always use chicken on the bone – a whole jointed chicken would be ideal – to prevent the chicken from being too dry and allow the bones to contribute to flavour.

You will need:

  • Chicken, chopped into bitesize chunks
  • 1 onion, finely chopped
  • 2-3 cloves garlic, minced
  • 2 small red chillies, minced
  • 1 tsp ginger, finely chopped
  • 1 tsp turmeric
  • 1 tbsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp cumin seeds
  • 1 bay leaf
  • 1 cup of chicken stock
  • 400ml tin of coconut milk
  • Lime juice
  • Dash of sugar
  • Fish sauce
  • 1 sweet potato, peeled and diced
  • 2 potatoes, peeled and diced
  • Fresh coriander

Using a deep saucepan, start by frying the onions in a little oil until translucent. Add the minced chilli and garlic (eyes may water). Then add your spice mix (turmeric, coriander, two types of cumin) followed by the diced chicken. Toss in the pan for a few minutes until the chicken is coated and sealed on all sides, adding more oil if necessary. Then add your coconut milk, chicken stock and bay leaf and bring it all to the boil. Add in the diced sweet potato and two potatoes and simmer on low for about 25 minutes.

Towards the end, season with a dash of lime juice, sugar and fish sauce to your taste. Serve topped with fresh coriander leaves and a steaming bowl of white rice. Now put this video on in the background and dream of Koh Samui…
