Just pretend it’s BBQ chicken

A quick post to say that I pretend-barbecued some chicken thighs from my Farmer’s Choice meat box this weekend. It should have been a real one, but apparently we’re in the middle of a 30-day onslaught of rainy, windy weather in England. What next, a plague of locusts??

Chicken thighs are without a doubt my favourite part of the chicken. My box supplied 1kg i.e. 6 chicken thighs from the good chickens of Childhay Manor – the same farm that breeds the goat. I very simply marinated the thighs in an Asian-BBQ style marinade – soy sauce, honey, ginger, garlic, and 2 chopped up red chillis – then put them in the oven at 200C for 45 minutes. To get the skin nice and crispy/sticky, I turned the grill on for the last few minutes.

The chicken thighs came out absolutely perfect – succulent, with good skin that had the right amount of fat. We ate our chicken thighs with coleslaw, corn on the cob and crusty bread, staring out the rain-streaked windows and imagining ourselves far, far away…
