The Great Rib-off

Yesterday I went over to Laura’s house for a Sunday roast. Laura is an accomplished and talented food stylist/writer who also blogs on the side as Sifting Sowing. Going to her and James’s house is like going to food heaven so I am always very excited. Mini Buffalo Wellingtons

I’ve tried mozzarella and ricotta from the Laverstoke buffalo to great satisfaction – now it’s time to move on to the meat itself. The premium piece in my Laverstoke meat box was a buffalo fillet. I immediately knew what I wanted to make: an alternative to Beef Wellington. I haven’t seen the buffalo version done anywhere on the internet, BUT I first got the inspiration from reading Obama Foodorama, which reveals that Bison Wellington was served to David Cameron at a White House Dinner in March. Buffalo ricotta hotcakes – an Ottolenghi recipe

It’s nice to be able to share a vegetarian recipe on my blog. Contrary to popular belief, I don’t eat a lot of meat, all the time! In fact I try and have two or three vegetarian days per week. This month I got some ricotta in my Laverstoke Park Farm meat box, made from their buffalo milk – apparently this is the winner of a two star Gold Award at the Taste 2010 Awards (the Oscars of the food industry).
