
It’s nice to be able to share a vegetarian recipe on my blog. Contrary to popular belief, I don’t eat a lot of meat, all the time! In fact I try and have two or three vegetarian days per week. This month I got some ricotta in my Laverstoke Park Farm meat box, made from their buffalo milk – apparently this is the winner of a two star Gold Award at the Taste 2010 Awards (the Oscars of the food industry).
I followed Yotam Ottolenghi’s recipe for ricotta hotcakes; a savoury twist on pancakes topped with a spinach, cherry tomato and pine nut salad. The recipe is over here on the Guardian.


Very tasty, refreshing and light (at least it would have been if we hadn’t doubled our own portions). The hotcakes would be a perfect starter for four, or satisfying dinner for two.
Laverstoke’s buffalo ricotta is only £1.75 for 200g. NB Buffalo milk can be a good alternative for those with allergy to cow’s milk so if you are lactose intolerant, give it a go. It’s also meant to be good for sufferers of eczema, psoriasis, IBS, high blood pressure…
